Recipe Name: Cheesy Chicken Stuffed Bell Peppers

Ingredients:
- 4 bell peppers (any color)
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, diced
- 1 bell pepper, diced
- 1 tomato, diced
- 2 cloves garlic, minced
- Salt and pepper to taste

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

3. In a skillet, heat some oil over medium heat. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes.

4. Add the diced onion, bell pepper, tomato, and minced garlic to the skillet with the chicken. Cook for another 3-4 minutes until the vegetables are softened.

5. In a bowl, beat the eggs and mix in the shredded cheese. Season with salt and pepper.

6. Add the egg and cheese mixture to the skillet with the chicken and vegetables. Stir well to combine and cook for another 2-3 minutes until the eggs are cooked through.

7. Spoon the chicken and vegetable mixture into the hollowed-out bell peppers, filling them to the top.

8. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.

9. Remove the foil and sprinkle some extra cheese on top of each stuffed bell pepper. Bake for an additional 5 minutes, or until the cheese is melted and bubbly.

10. Serve the cheesy chicken stuffed bell peppers hot, garnished with some fresh herbs if desired. Enjoy your delicious and nutritious meal!
