Make Cheesy Chicken Stuffed Peppers

Ingredients:
- 4 large bell peppers (any color)
- 1 lb chicken breast, diced
- 2 eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, diced
- 1 tomato, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
3. In a skillet, heat some oil over medium heat. Add the diced chicken and cook until no longer pink, about 5-7 minutes.
4. Add the diced onion and minced garlic to the skillet with the chicken. Cook until the onions are translucent, about 3-4 minutes.
5. In a bowl, beat the eggs and mix in the shredded cheese. Add this mixture to the skillet with the chicken, onion, and garlic. Stir well to combine.
6. Season the mixture with salt and pepper to taste. Cook for another 2-3 minutes until the cheese is melted and everything is well combined.
7. Stir in the diced tomato and cook for an additional minute.
8. Spoon the chicken and cheese mixture into the hollowed-out bell peppers, filling them to the top.
9. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
10. Remove the foil and bake for an additional 5-10 minutes to brown the cheese on top.
