Make Cheesy Chicken Stuffed Tomatoes

Ingredients:
- 4 large tomatoes
- 1 lb chicken breast, cooked and shredded
- 2 cloves of garlic, minced
- 4 eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the tomatoes and carefully scoop out the seeds and pulp to create a hollow cavity. Set aside.
3. In a skillet, heat some olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
4. Add the shredded chicken to the skillet and season with salt and pepper. Cook for another 2-3 minutes until the chicken is heated through.
5. Fill each hollowed-out tomato with the cooked chicken mixture, leaving some space at the top for the egg.
6. Crack an egg into each tomato on top of the chicken mixture. Sprinkle with salt and pepper.
7. Place the stuffed tomatoes on a baking sheet and bake in the preheated oven for about 20-25 minutes, or until the egg whites are set but the yolks are still slightly runny.
8. Remove the tomatoes from the oven and sprinkle shredded cheese on top of each tomato.
9. Return the tomatoes to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
