Cheesy Corn Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 cup fresh or frozen corn kernels
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup shredded cheddar cheese
- 3 large eggs
- 1/4 cup heavy cream
- Salt to taste
Instructions:
1. Preheat oven to 375°F.
2. Heat oil in a 10-inch oven-safe skillet over medium heat. Add corn and pepper and cook, stirring occasionally, until corn is lightly browned, about 5 minutes.
3. Sprinkle cheese over the corn and stir to combine.
4. In a medium bowl, whisk together eggs and cream. Pour egg mixture over the corn and cheese in the skillet.
5. Cook over medium heat until the edges of the frittata are set, about 5 minutes.
6. Transfer skillet to the preheated oven and bake until the center of the frittata is set, about 10 minutes.
7. Let cool for 5 minutes before slicing and serving. Enjoy!
