Cheesy Couscous Pasta
Ingredients:
- 2 cups of couscous
- 2 tablespoons of butter
- 2 cups of milk
- 2 cups of grated cheese
- 2 eggs
- 1 tomato, diced
- 1 cucumber, diced
- Juice of 1 lemon
Instructions:
1. In a large pot, bring 4 cups of water to a boil.
2. Once boiling, add the couscous and stir. Reduce the heat to low and cover the pot. Simmer for 10 minutes, or until the couscous is cooked through.
3. In a separate pot, melt the butter over medium heat.
4. Once melted, add the milk and stir. Bring the mixture to a simmer and add the grated cheese. Stir until the cheese is melted and the sauce is creamy.
5. In a small bowl, whisk together the eggs.
6. Add the egg mixture to the cheese sauce and stir until combined.
7. Add the cooked couscous to the cheese sauce and stir until combined.
8. Add the diced tomato and cucumber and stir until combined.
9. Squeeze the juice of 1 lemon into the couscous and stir until combined.
10. Serve the cheesy couscous pasta warm. Enjoy!
