Cheesy Eggplant Bake

Ingredients:

-1 large eggplant, sliced into 1/2 inch thick rounds
-1 cup of cheddar cheese, shredded
-2 eggs, beaten
-1 onion, diced
-1 cup of cooked white rice
-1 cup of cooked pasta
-1/2 lb of cooked chicken, diced
-1/2 lb of cooked ground beef
-1/2 lb of cooked pork rib, diced

Instructions:

1. Preheat oven to 350 degrees F.

2. Grease a 9x13 inch baking dish with cooking spray.

3. Arrange the eggplant slices in the bottom of the baking dish.

4. In a medium bowl, combine the cheddar cheese, eggs, onion, rice, pasta, chicken, ground beef, and pork rib. Mix until everything is evenly distributed.

5. Spread the cheese and meat mixture over the eggplant slices.

6. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.

7. Serve warm and enjoy!
