**Ingredients:**
- 1 cup of rice
- 2 chicken breasts, diced
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Olive oil

**Step by Step Guide:**

1. Preheat the oven to 375°F (190°C).

2. Cook the rice according to package instructions and set aside.

3. In a skillet, heat some olive oil over medium heat. Add the diced chicken breasts and cook until they are no longer pink, about 5-7 minutes.

4. Add the diced bell pepper and minced garlic to the skillet with the chicken. Cook for another 2-3 minutes until the vegetables are softened.
