Ingredients:
- 4 large potatoes
- 2 chicken breasts, cooked and shredded
- 4 cloves of garlic, minced
- 1 tablespoon herbs spice blend
- 1 cup breadcrumbs
- 2 eggs, beaten
- Vegetable oil
- 1 cup shredded mozzarella cheese
- Salt, to taste
- Chopped parsley, for garnish
- Black pepper, to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash and scrub the potatoes, then pierce them with a fork. Rub them with vegetable oil and sprinkle with salt. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender.
3. Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer inside the skins. Place the potato flesh in a bowl and mash it.
4. In a separate bowl, mix the shredded chicken, minced garlic, herbs spice blend, breadcrumbs, beaten eggs, mozzarella cheese, salt, and black pepper. Stir until well combined.
5. Fill each potato skin with the chicken mixture, pressing down gently to pack it in.
6. Place the stuffed potatoes back on the baking sheet and bake for an additional 15-20 minutes, or until the tops are golden brown and the filling is heated through.
