Cheesy Garlic Rice
Ingredients:
-2 tablespoons olive oil
-1 small onion, diced
-2 cloves garlic, minced
-1 cup uncooked long grain white rice
-2 cups chicken broth
-1/2 cup shredded cheddar cheese
-2 eggs, lightly beaten
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
2. Add the rice and stir to coat with the oil. Cook for 1 minute.
3. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
4. Remove the lid and stir in the cheese and eggs. Cook for an additional 5 minutes, stirring occasionally, until the cheese is melted and the eggs are cooked.
5. Serve the cheesy garlic rice hot. Enjoy!
