Cheesy Green Bean and Sausage Potato Bake
Ingredients:
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 2 large eggs
- 1/2 lb. sausage, cooked and crumbled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 large potatoes, peeled and diced
- 1/2 cup milk
- 2 limes, juiced
- 1 large carrot, peeled and diced
- 1 cup shredded cheddar cheese
- 2 tablespoons bacon bits
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine green beans, eggs, sausage, salt, pepper, and paprika. Mix until ingredients are evenly distributed.
3. In a separate bowl, combine potatoes, milk, lime juice, and carrot. Mix until ingredients are evenly distributed.
4. Grease a 9x13 inch baking dish with cooking spray.
5. Spread the green bean mixture in the bottom of the baking dish.
6. Top with the potato mixture.
7. Sprinkle the cheddar cheese and bacon bits over the top.
8. Bake for 30-35 minutes, or until potatoes are cooked through and cheese is melted and bubbly.
9. Let cool for 10 minutes before serving. Enjoy!
