Cheesy Ground Beef and Veggie Bake
Ingredients:
- 1 lb. ground beef
- 1 lb. brussel sprouts, trimmed and halved
- 1 lb. broccoli florets
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 5 minutes.
3. Add garlic and cook for an additional minute.
4. In a large bowl, combine cooked ground beef, brussel sprouts, broccoli, potatoes, and salt and pepper. Toss to combine.
5. Transfer mixture to a 9x13 inch baking dish. Sprinkle with cheese.
6. Bake for 25-30 minutes, or until vegetables are tender and cheese is melted and bubbly.
7. Serve warm. Enjoy!
