Cheesy Leek and Potato Bake
Ingredients:
- 2 leeks, thinly sliced
- 2 potatoes, peeled and diced
- 2 sweet potatoes, peeled and diced
- 1 head of broccoli, cut into florets
- 2 onions, diced
- 2 cups of shredded cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine the leeks, potatoes, sweet potatoes, broccoli, onions, and 1 cup of the cheese.
3. Drizzle the olive oil over the vegetables and season with salt and pepper.
4. Transfer the mixture to a greased 9x13 inch baking dish.
5. Sprinkle the remaining cup of cheese over the top of the vegetables.
6. Bake for 30 minutes, or until the vegetables are tender and the cheese is melted and golden.
7. Serve with a side of salads. Enjoy!
