Recipe Name: Cheesy Mince Stuffed Sweet Potatoes

Ingredients:
- 500g mince
- 2 large sweet potatoes
- 1 cup broccoli, chopped
- 1/2 cup sweetcorn
- 2 eggs
- 2 tbsp butter
- Salt and pepper to taste
- 1 onion, diced
- 1 cup grated cheese
- 2 tbsp flour
- 2 tbsp olive oil
- 2 carrots, grated
- 1 cup cooked rice
- 1 cup cooked pasta
- 2 tbsp soy sauce

Instructions:
1. Preheat the oven to 200°C (400°F).
2. Wash the sweet potatoes and pierce them with a fork. Bake in the oven for 45-50 minutes until tender.
3. In a pan, heat olive oil and sauté the diced onion until translucent.
4. Add the mince to the pan and cook until browned. Season with salt and pepper.
5. Stir in the chopped broccoli, sweetcorn, and grated carrots. Cook for another 5 minutes.
6. Add the cooked rice, pasta, soy sauce, and flour to the mince mixture. Stir well to combine.
7. Remove the sweet potatoes from the oven and let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to create a hollow space.
8. In a bowl, mix the scooped sweet potato flesh with butter, salt, pepper, and grated cheese.
9. Fill each sweet potato half with the mince mixture, then top with the sweet potato and cheese mixture.
10. Crack an egg on top of each stuffed sweet potato.
11. Bake in the oven for 15-20 minutes until the eggs are cooked to your liking.
