Cheesy Omelette
Ingredients:
-2 eggs
-1/4 cup shredded cheese
-1/4 cup diced onion
-1/4 cup diced tomatoes
-1/4 teaspoon freshly ground pepper
Instructions:
1. Crack the eggs into a bowl and whisk until combined.
2. Heat a non-stick skillet over medium heat and add the eggs.
3. As the eggs begin to cook, add the onion, tomatoes, and pepper.
4. Cook for 3-4 minutes, stirring occasionally, until the eggs are almost set.
5. Sprinkle the cheese over the top and cook for another minute or two until the cheese is melted and the eggs are cooked through.
6. Serve warm and enjoy!
