Ingredients:
- 2 eggs
- 2 carrots, grated
- 1/2 cup cheddar cheese, grated
- 1/4 cup oat milk
- 1/2 teaspoon garlic powder
- 2 potatoes, diced
- 1 onion, diced
Instructions:
1. Heat a large non-stick skillet over medium heat.
2. Add the potatoes and onions to the skillet and cook for 5 minutes, stirring occasionally.
3. In a medium bowl, whisk together the eggs, oat milk, and garlic powder.
4. Add the grated carrots and cheddar cheese to the egg mixture and stir until combined.
5. Pour the egg mixture into the skillet with the potatoes and onions.
6. Cook for 5 minutes, stirring occasionally, until the eggs are cooked through.
