Cheesy Onion Rice Casserole

Ingredients:

- 2 eggs
- 2 cups milk
- 1 white onion, diced
- 1/2 cup all-purpose flour
- 1 can cream of mushroom soup
- 2 cups cooked white rice

Instructions:

1. Preheat oven to 350°F.

2. In a medium bowl, whisk together eggs and milk.

3. In a large skillet over medium heat, sauté onion until softened, about 5 minutes.

4. Add flour and stir until combined.

5. Add egg and milk mixture and stir until thickened.

6. Add cream of mushroom soup and stir until combined.

7. In a 9x13 inch baking dish, spread cooked rice in an even layer.

8. Pour onion and cream of mushroom mixture over the top of the rice.

9. Bake in preheated oven for 30 minutes.

10. Serve and enjoy!
