Ingredients:
- 8 oz pasta
- 1 cup grated cheese (such as Parmesan or Pecorino)
- 1 small onion, finely chopped
- 2 eggs
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
2. In a separate bowl, whisk together the eggs, grated cheese, salt, and pepper. Set aside.
3. In a large skillet, sauté the chopped onion and minced garlic in olive oil until softened and fragrant.
4. Add the cooked pasta to the skillet with the onions and garlic, tossing to combine.
5. Remove the skillet from heat and quickly stir in the egg and cheese mixture, tossing continuously to prevent the eggs from scrambling.
6. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached.
