Make Cheesy Pepper and Onion Rice

Ingredients:
- 1 cup rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 4 eggs
- 1 cup shredded cheese
- Salt to taste
Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some oil over medium heat.
3. Add the diced onion and bell pepper to the skillet and sauté until they are soft and slightly caramelized.
4. Add the minced garlic to the skillet and cook for another minute.
5. Push the vegetables to one side of the skillet and crack the eggs into the empty side.
6. Scramble the eggs until cooked through, then mix them with the vegetables.
7. Add the cooked rice to the skillet and stir everything together.
8. Sprinkle the shredded cheese over the rice mixture and stir until the cheese is melted and everything is well combined.
9. Season with salt to taste.
