Recipe Name: Cheesy Pepper Pasta

- 8 oz pasta
- 1 sweet red pepper, diced
- 1 cup cheese, grated
- 2 eggs
- 1 onion, chopped
- 1/2 tsp salt
- 2 tbsp butter
- 1 tbsp oil

1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat the oil and butter over medium heat.
3. Add the chopped onion and diced sweet red pepper to the skillet. Cook until softened, about 5 minutes.
4. In a small bowl, beat the eggs and season with salt.
5. Add the cooked pasta to the skillet with the onions and peppers. Mix well.
6. Pour the beaten eggs over the pasta mixture and stir quickly to coat the pasta evenly.
7. Sprinkle the grated cheese over the pasta and continue to stir until the cheese is melted and the eggs are cooked.
8. Remove from heat and serve hot. Enjoy your Cheesy Pepper Pasta!
