Cheesy Pork and Chicken Stuffed Potatoes
Ingredients:
- 4 large potatoes
- 1 cup shredded cheese
- 1/4 cup chopped parsley
- 2 tablespoons tomato paste
- 1 teaspoon dill
- 1 cup cooked chicken, shredded
- 1 cup cooked pork, shredded
- 1 cup cooked rice
- 1 onion, diced
- 1/2 cup sour cream
- 1 cup chicken broth
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and prick them with a fork. Bake them in the oven for about 45-60 minutes until they are tender.
3. In a skillet, sauté the diced onion until translucent.
4. Add the shredded chicken, pork, and cooked rice to the skillet. Stir in the tomato paste, dill, and chicken broth. Cook for a few minutes until heated through.
5. Cut the cooked potatoes in half lengthwise and scoop out the flesh, leaving a thin layer inside the skin.
6. Mash the potato flesh and mix it with the sour cream, shredded cheese, and chopped parsley.
7. Fill the potato skins with the chicken and pork mixture, then top with the cheesy potato mixture.
8. Place the stuffed potatoes back in the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
9. Serve hot, garnished with extra parsley if desired. Enjoy!
