Cheesy Potato and Onion Frittata
Ingredients:
- 6 eggs
- 1/2 cup shredded cheese
- 2 slices of bread, toasted and crumbled
- 2 tablespoons butter
- 1/2 cup diced onions
- 1 cup diced potatoes
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, melt the butter over medium heat. Add the onions and potatoes and cook for about 5 minutes, stirring occasionally, until the onions are softened and the potatoes are lightly browned.
3. In a medium bowl, whisk together the eggs, cheese, bread crumbs, and salt and pepper.
4. Add the egg mixture to the skillet and stir to combine. Cook for about 5 minutes, stirring occasionally, until the eggs are set.
5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are cooked through.
6. Serve warm. Enjoy!
