Ingredients:
- 2 large potatoes, peeled and diced
- 1 cup of rice
- 1 can of luncheon meat, diced
- 1 cup of shredded cheddar cheese
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 cups of chicken or vegetable broth
- 2 tablespoons of olive oil
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
3. Add the diced potatoes and luncheon meat to the skillet, and cook until the potatoes are slightly browned.
4. Stir in the rice and paprika, and cook for another 2-3 minutes.
5. Pour in the chicken or vegetable broth, and season with salt and pepper. Bring to a simmer.
6. Transfer the mixture to a baking dish, and cover with aluminum foil.
7. Bake in the preheated oven for 30 minutes.
8. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
