Cheesy Potato Frittata
Ingredients:
- 2 tablespoons olive oil
- 2 cups diced pommes de terre
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 large eggs
- 1/2 cup grated Gruyere cheese
- 2 tablespoons chopped fresh parsley
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat the olive oil in a large oven-proof skillet over medium heat.
3. Add the diced potatoes and season with salt and pepper. Cook, stirring occasionally, until the potatoes are golden and tender, about 10 minutes.
4. In a medium bowl, whisk together the eggs, cheese, and parsley.
5. Pour the egg mixture over the potatoes and stir to combine.
6. Bake in the preheated oven for 20 minutes, or until the eggs are set and the top is golden brown.
7. Serve warm. Enjoy!
