Cheesy Potato Fritters


- 2 cups shredded mozzarella cheese
- 2 eggs
- 1 cup bread crumbs
- 1/2 cup flour
- 2 cups diced potatoes
- Frying oil


1. In a large bowl, combine the shredded mozzarella cheese, eggs, bread crumbs, and flour. Mix until all ingredients are evenly distributed.

2. Add the diced potatoes and mix until everything is evenly combined.

3. Heat a large skillet over medium-high heat and add enough frying oil to cover the bottom of the skillet.

4. Using a spoon or your hands, form the potato mixture into small patties.

5. Place the patties in the hot oil and cook for 3-4 minutes per side, or until golden brown and crispy.

6. Remove the fritters from the skillet and place on a paper towel-lined plate to absorb any excess oil.

7. Serve the fritters warm and enjoy!
