Make Cheesy Quinoa Stuffed Tomatoes
Recipe Name: Cheesy Quinoa Stuffed Tomatoes
Ingredients:
- 4 large tomatoes
- 1 cup cooked red quinoa
- 1/2 cup shredded cheese
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 tablespoon butter
- 1/4 cup milk
- 1 tablespoon brown sugar
- 1/2 teaspoon vanillin
- 1/2 teaspoon baking soda
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the tomatoes and scoop out the seeds and flesh to create a hollow cavity. Set aside.
3. In a mixing bowl, combine the cooked red quinoa, shredded cheese, pepper, and salt. Mix well.
4. Stuff each tomato with the quinoa mixture and place them in a baking dish.
5. In a small saucepan, melt the butter over low heat. Add the milk, brown sugar, vanillin, and baking soda. Stir until well combined.
6. Pour the butter mixture over the stuffed tomatoes.
7. Bake in the preheated oven for 20-25 minutes, or until the tomatoes are tender and the cheese is melted and bubbly.
8. Serve the cheesy quinoa stuffed tomatoes hot and enjoy!
