Cheesy Rice and Pasta Skillet

Ingredients:

-1 cup of uncooked white rice
-2 tablespoons of olive oil
-1 small onion, diced
-1 clove of garlic, minced
-1 bell pepper, diced
-1 cup of diced tomatoes
-1 cup of uncooked pasta
-2 cups of shredded cheese
-4 eggs

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion, garlic, and bell pepper and cook until the vegetables are tender, about 5 minutes.

3. Add the rice and cook for another 2 minutes.

4. Add the tomatoes and pasta and stir to combine.

5. Add 2 cups of water and bring to a boil.

6. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, or until the rice and pasta are cooked.

7. Remove the lid and stir in the cheese.

8. Make four wells in the mixture and crack an egg into each one.

9. Cover the skillet and cook for another 5 minutes, or until the eggs are cooked to your liking.

10. Serve hot and enjoy!
