Cheesy Rice and Pea Potato Bake
Ingredients:
- 2 cups cooked white rice
- 1 cup frozen peas
- 2 cups shredded cheese (cheddar or mozzarella work well)
- 2 large potatoes, peeled and thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Grease a 9x13 inch baking dish.
3. Spread the cooked rice in the bottom of the baking dish.
4. Top the rice with the frozen peas.
5. Sprinkle the shredded cheese over the peas.
6. Arrange the thinly sliced potatoes over the cheese.
7. Drizzle the olive oil over the potatoes and season with salt and pepper.
8. Bake in preheated oven for 45 minutes, or until potatoes are tender and cheese is melted and bubbly.
9. Let cool for 10 minutes before serving. Enjoy!
