Cheesy Saag Pasta
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 2 tomatoes, diced
- 2 cups saag (spinach or other leafy greens)
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon of your favorite spices
- 2 cups cooked pasta
- 1/2 cup shredded cheese
- 2 slices of bread, toasted
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
3. Add the carrot and tomatoes and cook for an additional 3 minutes.
4. Add the saag and cook for another 3 minutes.
5. Add the pepper, salt, and spices and mix everything together.
6. Add the cooked pasta and stir to combine.
7. Sprinkle the cheese over the top and cover the skillet.
8. Cook for an additional 5 minutes, or until the cheese is melted.
9. Serve the cheesy saag pasta with toasted bread. Enjoy!
