Cheesy Squash Casserole
Ingredients:
2 cups diced yellow squash
1 package French onion soup mix
2 eggs, beaten
1/2 cup milk
1/4 cup mayonnaise
1/2 cup bread crumbs
2 tablespoons butter, melted
Instructions:
1. Preheat oven to 350°F.
2. Place the diced squash in a medium-sized bowl and sprinkle with the French onion soup mix.
3. In a separate bowl, whisk together the eggs, milk, and mayonnaise until combined.
4. Pour the egg mixture over the squash and mix until everything is evenly coated.
5. Pour the squash mixture into a greased 9x13-inch baking dish.
6. In a small bowl, combine the bread crumbs and melted butter. Sprinkle the mixture over the top of the squash.
7. Bake for 30 minutes, or until the top is golden brown and the squash is tender.
8. Serve warm. Enjoy!
