- 2 medium-sized eggplants
- 1 pound ground beef

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil

Step-by-Step Guide:

1. Preheat your oven to 375°F (190°C).

2. Cut the eggplants in half lengthwise. Using a spoon, carefully scoop out the flesh from the center, leaving about a 1/2-inch thick shell. Chop the scooped-out eggplant flesh into small pieces and set aside.

3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.

4. Add the ground beef to the skillet and cook, breaking it up with a wooden spoon, until browned and cooked through.
