Cheesy Sweet Potato Casserole

Ingredients:

-3 large sweet potatoes, peeled and diced
-1 egg
-1/2 cup milk
-1 cup shredded cheese
-2 tablespoons butter, melted
-1/2 teaspoon black pepper
-1/2 teaspoon salt

Instructions:

1. Preheat oven to 350 degrees F.

2. Place diced sweet potatoes in a large pot and cover with water. Bring to a boil over high heat and cook for 10 minutes, or until potatoes are tender. Drain and set aside.

3. In a medium bowl, whisk together egg, milk, cheese, melted butter, black pepper and salt.

4. Add cooked sweet potatoes to the egg mixture and stir to combine.

5. Pour mixture into a greased 9x13 inch baking dish.

6. Bake for 30 minutes, or until cheese is melted and bubbly.

7. Serve warm. Enjoy!
