Cheesy Sweet Potato Hash

Ingredients:

- 2 tablespoons olive oil
- 1 red onion, diced
- 2 sweet potatoes, cubed
- Salt and pepper, to taste
- ½ teaspoon pepper flakes
- ½ teaspoon basil
- ½ teaspoon chili powder
- ½ pound minced beef
- 2 cloves garlic, minced
- 1 tomato, diced
- 2 tablespoons cilantro, chopped
- 1 teaspoon sugar
- 4 slices toast
- 4 eggs
- 1 cup cheddar cheese, grated

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the red onion and sweet potatoes and season with salt and pepper. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes.

3. Add the pepper flakes, basil, chili powder, minced beef, and garlic. Cook, stirring occasionally, until the beef is cooked through, about 5 minutes.

4. Add the tomato, cilantro, and sugar. Cook, stirring occasionally, until the tomato is softened, about 3 minutes.

5. Toast the slices of bread.

6. Divide the hash among four plates and top each with a fried egg.

7. Sprinkle the cheddar cheese over the top of each plate and serve with the toast. Enjoy!
