- 2 eggs

- 1/4 cup diced tomato

Step-by-Step Guide:

1. Crack the eggs into a bowl and whisk them until well beaten. Season with salt and pepper according to your taste.

2. Heat the oil or butter in a non-stick skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until they become translucent.

3. Add the diced tomato to the skillet and cook for another 2 minutes, stirring occasionally, until the tomatoes soften slightly.
