Ingredients:
- 8 oz pasta of your choice
- 2 eggs
- 1 cup grated cheese (such as Parmesan or cheddar)
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1 onion, diced
- 1 tsp salt
- 2 cloves garlic, minced
- 2 tbsp olive oil
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a bowl, beat the eggs and mix in half of the grated cheese. Set aside.
3. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
