Recipe Name: Cheesy Tomato Pasta

Ingredients:
- 8 oz pasta
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1 cup shredded cheese (cheddar or mozzarella)

Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes.
3. Add the minced garlic and cook for another minute until fragrant.
4. Pour in the can of diced tomatoes and season with salt and pepper. Let the mixture simmer for 10 minutes.
5. In a small bowl, beat the eggs and slowly pour them into the tomato mixture, stirring constantly until the eggs are cooked and well incorporated.
6. Add the cooked pasta to the skillet and toss to combine with the tomato and egg mixture.
7. Sprinkle the shredded cheese over the pasta and stir until the cheese is melted and the pasta is coated evenly.
