Cheesy Tomato Rice
Ingredients:
- 2 cups cooked rice
- 1 large tomato, diced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 cup diced onion
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese
- 2 slices of bread, toasted
Instructions:
1. Preheat oven to 350°F.
2. In a medium bowl, combine cooked rice, diced tomato, minced garlic, salt, diced onion, and black pepper.
3. Pour the mixture into a greased baking dish.
4. Top with shredded cheese.
5. Bake in preheated oven for 20 minutes.
6. Serve with toasted bread. Enjoy!
