Make Cheesy Tomato Rice Casserole
Recipe Name: Cheesy Tomato Rice Casserole
Ingredients:
- 2 cloves of garlic, minced
- 1 tomato, diced
- 1 cup of shredded cheese
- 1 cup of rice
- 2 potatoes, peeled and diced
- 2 eggs
- 1 cup of pasta
- Salt, to taste
- 1 onion, diced
- Pepper, to taste
Instructions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a large skillet, heat some oil over medium heat and sauté the minced garlic and diced onion until fragrant.
3. Add in the diced tomato and cook until softened.
4. Stir in the rice and pasta, and cook for a few minutes until slightly toasted.
5. Pour in enough water to cover the rice and pasta, season with salt and pepper, and bring to a boil. Reduce heat, cover, and let simmer until the rice and pasta are cooked through.
6. In a separate pot, boil the diced potatoes until tender. Drain and set aside.
7. In a bowl, beat the eggs and season with salt and pepper.
8. Once the rice and pasta are cooked, transfer them to the greased baking dish.
9. Mix in the boiled potatoes and shredded cheese, then pour the beaten eggs over the mixture.
10. Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
