Cheesy Vegetable Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 cup chopped broccoli
- 1 cup chopped cauliflower
- 1 cup chopped carrots
- 1 cup shredded cheese
- 4 eggs
- 1/2 cup milk
- 1/2 cup plain yoghurt
- 2 cups mixed salad leaves
Instructions:
1. Preheat the oven to 350°F.
2. Heat the olive oil in a large oven-safe skillet over medium heat.
3. Add the broccoli, cauliflower, and carrots and cook for 5 minutes, stirring occasionally.
4. In a medium bowl, whisk together the eggs, milk, and yoghurt.
5. Pour the egg mixture into the skillet and stir to combine.
6. Sprinkle the cheese over the top and transfer the skillet to the oven.
7. Bake for 20 minutes, or until the eggs are set and the cheese is melted and golden.
8. Serve the frittata with the mixed salad leaves. Enjoy!
