Recipe: Cheesy Veggie Spaghetti Bake
Ingredients:
- 8 oz spaghetti
- 2 potatoes, peeled and diced
- 1 onion, diced
- 1 cup shredded cheese
- 1 bell pepper, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1/2 cup white wine
- 1 can diced tomatoes
- 1 can corn, drained
- 1 can kidney beans, drained and rinsed
- 1 cup sliced champignons
Instructions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. Cook the spaghetti according to package instructions, then drain and set aside.
3. In a large skillet, heat some olive oil over medium heat. Add the onions, bell pepper, carrots, and garlic. Cook until the vegetables are softened.
4. Add the potatoes and cook for another 5 minutes.
5. Stir in the white wine and let it simmer for a few minutes until slightly reduced.
6. Add the diced tomatoes, corn, kidney beans, and champignons. Season with salt and pepper.
7. Mix in the cooked spaghetti and half of the shredded cheese. Stir everything together until well combined.
8. Transfer the mixture to the prepared baking dish and sprinkle the remaining cheese on top.
9. Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
