Recipe: Cheesy Zucchini Tomato Pasta

Ingredients:
- 2 medium zucchinis, sliced
- 2 tomatoes, diced
- 8 oz pasta of your choice
- 1 onion, chopped
- 1 bell pepper, sliced
- 1 cup shredded cheese (such as mozzarella or cheddar)
- Salt and pepper to taste
- Olive oil

Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened.
3. Add the sliced zucchini to the skillet and cook until slightly browned and tender.
4. Stir in the diced tomatoes and cook for a few more minutes until they start to soften.
5. Add the cooked pasta to the skillet and mix everything together.
6. Season with salt and pepper to taste.
7. Sprinkle the shredded cheese over the pasta and vegetables, and cover the skillet with a lid to allow the cheese to melt.
8. Once the cheese has melted, remove the skillet from heat and serve the cheesy zucchini tomato pasta hot.
