Pomegranate Chicken and Rice

Ingredients:

- 2 cups of cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 1/4 cup pomegranate seeds
- 2 cloves garlic, minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook until golden brown and cooked through, about 8 minutes.

3. Add the garlic, cumin, coriander, salt, and pepper and cook for 1 minute.

4. Add the pomegranate seeds and cook for 1 minute.

5. Add the cooked rice and stir to combine.

6. Cook until heated through, about 5 minutes.

7. Serve with chopped fresh parsley. Enjoy!
