Chicken and Bean Casserole

Ingredients:

- 4 chicken thighs
- 1 can kidney beans, drained
- 2 cloves garlic, minced
- 1/2 cup sour cream
- 1/4 cup chili sauce
- 1/4 cup all-purpose flour
- 2 eggs, lightly beaten
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon thyme
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon mustard
- 1 tablespoon ketchup
- 1/2 cup diced ham
- 1/2 cup diced carrots
- 1/2 cup diced parsnips
- 1 teaspoon paprika

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine the chicken thighs, beans, garlic, sour cream, chili sauce, flour, eggs, salt, pepper, and thyme. Mix until all ingredients are evenly distributed.

3. Heat the olive oil and butter in a large skillet over medium heat. Add the chicken mixture and cook for 5 minutes, stirring occasionally.

4. Add the mustard, ketchup, ham, carrots, parsnips, and paprika. Cook for an additional 5 minutes, stirring occasionally.

5. Transfer the mixture to a 9x13 inch baking dish. Bake for 30 minutes, or until the chicken is cooked through.

6. Serve hot and enjoy!
