Make Chicken and Bean Salad
Chicken and Bean Salad
Ingredients:
- 2 chicken breasts
- 2 cups of green salad
- 1 cup of mushrooms, sliced
- 1 cup of tomatoes, diced
- 1 cup of red beans, cooked
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper, to taste
Instructions:
1. Preheat the oven to 375 degrees Fahrenheit.
2. Place the chicken breasts on a baking sheet and season with salt and pepper. Bake for 25 minutes or until cooked through.
3. Meanwhile, in a large bowl, combine the green salad, mushrooms, tomatoes, and red beans.
4. In a small bowl, whisk together the olive oil and balsamic vinegar.
5. Once the chicken is cooked, let it cool and then cut into cubes.
6. Add the chicken to the salad and pour the dressing over the top.
7. Toss to combine and season with salt and pepper, to taste.
8. Serve chilled or at room temperature. Enjoy!
