Chicken and Bean Stir-Fry
Ingredients:
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sliced mushrooms
- 1 (15-ounce) can black beans, drained and rinsed
- 1/4 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the chicken cubes to the skillet and season with garlic powder, onion powder, paprika, salt, and pepper. Cook, stirring occasionally, until the chicken is cooked through, about 8 minutes.
3. Add the mushrooms and cook for an additional 2 minutes.
4. Add the black beans and chicken broth and stir to combine. Cook for an additional 3 minutes, stirring occasionally.
5. Remove from heat and stir in the parsley. Serve immediately.
