Chicken and Broccoli Rice Bowl
Ingredients:
-2 chicken breasts
-1 cup of uncooked white rice
-2 cups of broccoli florets
-1 tablespoon of olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Place chicken breasts on a baking sheet and season with salt and pepper. Bake in preheated oven for 20 minutes.
3. Meanwhile, cook the rice according to package instructions.
4. Heat olive oil in a large skillet over medium-high heat. Add broccoli florets and cook for 5 minutes, stirring occasionally.
5. Once chicken is cooked through, cut into cubes and add to the skillet with the broccoli. Cook for an additional 5 minutes.
6. To assemble the bowls, divide cooked rice between two bowls. Top with chicken and broccoli.
7. Serve and enjoy!
