Chicken and Carrot Stir Fry
Ingredients:
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons vegetable oil
- 2 carrots, peeled and cut into thin slices
- 1/2 cup canned black beans, drained and rinsed
Instructions:
1. Place the chicken cubes in a shallow dish and sprinkle with the flour, salt, and pepper. Toss to coat.
2. Heat the oil in a large skillet over medium-high heat. Add the chicken cubes and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes.
3. Add the carrots and black beans and cook, stirring occasionally, until the carrots are tender, about 5 minutes.
4. Serve the stir fry over cooked rice or noodles. Enjoy!
