Chicken and Celery Puff Pastry Pie
Ingredients:
- 2 chicken breasts, diced
- 2 tablespoons of chopped parsley
- Salt and pepper, to taste
- 2 tablespoons of olive oil
- 1 sheet of puff pastry
- 1 tablespoon of chilli oil
- ½ cup of sliced almonds
- 2 stalks of celery, diced
Instructions:
1. Preheat oven to 375°F (190°C).
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes.
3. Add the celery and cook for another 2 minutes.
4. Add the parsley, salt, and pepper and stir to combine.
5. Remove from heat and set aside.
6. Cut the puff pastry into a 9-inch (23 cm) circle. Place the pastry on a baking sheet lined with parchment paper.
7. Spread the chicken and celery mixture over the puff pastry, leaving a 1-inch (2.5 cm) border.
8. Sprinkle the almonds over the top.
9. Drizzle the chilli oil over the top.
10. Bake for 25 minutes or until the pastry is golden brown and the filling is cooked through.
11. Serve warm. Enjoy!
