Chicken and Cheese Egg Bake
Ingredients:
- 2 boneless, skinless chicken breasts
- 4 large eggs
- 1 cup shredded cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large skillet over medium-high heat.
3. Season chicken breasts with salt and pepper and add to the skillet. Cook until chicken is cooked through, about 8 minutes per side.
4. Remove chicken from skillet and set aside.
5. In a medium bowl, whisk together eggs and shredded cheese.
6. Grease a 9x13 inch baking dish with cooking spray.
7. Place chicken breasts in the baking dish.
8. Pour egg and cheese mixture over the chicken.
9. Bake in preheated oven for 25 minutes, or until eggs are set and cheese is melted and golden.
10. Serve warm. Enjoy!
