Make Chicken and Corn Quesadilla

Chicken and Corn Quesadilla

Ingredients:

- 2 boneless, skinless chicken breasts
- 1 cup of corn kernels
- 2 eggs
- 1 cup of shredded cheese
- 2 tablespoons of tomato paste
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat the olive oil in a large skillet over medium-high heat.

3. Add the chicken breasts and season with salt and pepper. Cook for 5-7 minutes, flipping once, until cooked through. Remove from heat and set aside.

4. In the same skillet, add the corn and cook for 3-4 minutes, stirring occasionally, until lightly browned.

5. In a separate bowl, whisk together the eggs, tomato paste, and 1/2 cup of the cheese.

6. Cut the chicken into small cubes and add it to the skillet with the corn. Pour the egg mixture over the chicken and corn and stir to combine.

7. Sprinkle the remaining 1/2 cup of cheese over the top.

8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and the egg mixture is cooked through.

9. Serve the quesadilla warm with your favorite toppings. Enjoy!
