Chicken and Egg Curry

Ingredients:

- 2 chicken breasts, cut into cubes
- 2 eggs, beaten
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 onion, diced
- 2 tablespoons coriander, chopped
- 1 tablespoon mint leaves, chopped
- 1 teaspoon curry leaves, chopped
- 2 tablespoons corn flour
- 1 teaspoon chilli powder
- Salt to taste

Instructions:

1. Heat a large pan over medium heat and add the chicken cubes. Cook until golden brown.

2. Add the garlic, tomatoes, onion, coriander, mint leaves, and curry leaves. Cook for a few minutes until the vegetables are softened.

3. Add the beaten eggs and stir to combine.

4. In a small bowl, mix together the corn flour and chilli powder. Add this to the pan and stir to combine.

5. Add salt to taste and cook for a few minutes until the eggs are cooked through.

6. Serve hot with steamed rice or naan. Enjoy!
